Blueberry Oatmeal Bars

This is a great recipe for kids to practice their measuring skills. They’ll also get to squish, mix, and take on other fun tasks in the kitchen.

Ingredients:

  • 1 cup quick oats
  • 1/2 cup white (or oat flour)
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/3 cup sugar
  • 1 tsp vanilla
  • 1/3 cup oil (vegetable or coconut – melt first if using coconut)
  • 2 cups fresh or frozen thawed blueberries
  • 1 1/2 tsp cornstarch
  • 1 tbsp sugar

Method:

  1. Preheat the oven to 350 F.
  2. Line an 8×8 pan with parchment paper which will help you easily
  3. remove the bars – *See photo of how the sides of our parchment come all the way up the sides to help with removing it later.
  4. In a large bowl, stir together the oats, flour, salt, baking powder, sugar, and cinnamon.
  5. Stir in your oil, then very firmly press 2/3 of the dough into the prepared pan, reserving the remaining dough.
  6. In another bowl, stir blueberries with the vanilla. Then add the starch, and your 1 tbsp of sugar. Press this mixture on top of the dough in the pan, then break up and sprinkle the remaining dough on top. Press down very firmly on the lot of it.
  7. Bake 30 minutes.
  8. Let them cool and cut into squares once they have firmed up.
  9. Eat them as is, or top with frosting or a glaze.
